Sweet potato balls with ginger



There are many ways to eat sweet potaoes. And here is another one. Steam the sweet potatoes (they have to be left in water for more than 8 hours to eliminate antinutrients).  Mash the potatoes with sweet starch (tapioca starch), rice flour, quinoa flakes, sesame seeds and ginger powder (you can change these ingredients for others you have at home). Put them little by little and try to put the minimum you can, so it doesn’t increase in calories. Salt as you like. 
Make small balls and wrap them in rice flour and ginger.
Fry in olive oil or cook in water (the water has to be very hot – when they come to the top it is time to take them out).   

Serve with tomato sauce or other sauce you like. Or eat it plain.
Tip: You can add herbs, like nirá and basil, or mushrooms.
